Calamari Salad

Another really quick recipe, ideal for a healthy meal for lunch or dinner. Serves 4

  • 1 handful mint
  • 1 handful basil
  • 1 handful sprouts
  • 300g calamari sliced tubes and tentacles
  • Medium green paw paw peeled and sliced
  • 2 medium hot green chillis finely chopped
  • 1 lime
  • 2 tbsp olive oil
  • 2 cloves garlic crushed

Marinate the calamari in the olive oil and combine with the chillis and garlic. On a platter combine the basil, mint, sprouts and paw paw. Heat a pan over a high heat, add the calamari and cook through. Add to the salad and squeeze over the juice of the lime.

Fish Curry

This fish curry is so quick to make and tastes delicious. Serves 6

  • 50ml oil
  • 2 large onions, chopped
  • 10-15ml curry powder (your choice of strength) 5ml turmeric
  • 4 cloves garlic
  • 10 ml fresh chopped green ginger
  • 6-9 curry leaves
  • 4 large tomatoes, chopped
  • Pinch salt
  • 25ml tamarind, steeped in 250ml hot water 1kg fish fillet (Yellowtail/Hake or other fairly firm fish)
  • 25 ml fresh coriander leaves

Heat oil and sauté onion, add garlic and ginger, curry powder, turmeric and curry leaves and fry, add the chopped tomatoes and salt and simmer for about 20 minutes (until a thick chutney like consistency has formed) Add the strained tamarind and simmer for 5 minutes, add fish fillets in the sauce and spoon some of the sauce over the fillets. Place a lid on the saucepan and simmer gently for 20 minutes. Sprinkle with chopped coriander leaves and serve immediately with steamed rice.

Prawns on the braai

Prawns of the braai taste so good, and using skewers makes the job so much easier. Serves 4

  • 18 medium-sized prawns
  • 4 tbsp fresh lemongrass end bit trimmed off
  • 5 cloves garlic
  • 1 thumbs-sized piece ginger
  • 1 fresh red chilli
  • ¼ cup fresh coriander leaves and stems
  • 2 tbsp fish sauce
  • 2 tbsp vegetable oil
  • ½ tbsp dark soy sauce
  • ½ tbsp shrimp paste
  • 3 tbsp lime juice
  • 3 tsp brown sugar
  • 2 spring onions sliced 

Place marinade ingredients together in a food processor and blitz till it forms a fine paste.  Place the prawns in a bowl and pour over the marinade.  Slather the marinade over the prawns with your hands, ensuring all surfaces are covered.  Marinate the prawns for 10-12 minutes.  Skewer the prawns onto the skewer sticks.  Grill the prawn skewers for 8 to 15 minutes or till the prawns are pink and plump and have firmed up.  Enjoy with a generous squeeze of lime juice.
