Calamari Salad

Another really quick recipe, ideal for a healthy meal for lunch or dinner. Serves 4

  • 1 handful mint
  • 1 handful basil
  • 1 handful sprouts
  • 300g calamari sliced tubes and tentacles
  • Medium green paw paw peeled and sliced
  • 2 medium hot green chillis finely chopped
  • 1 lime
  • 2 tbsp olive oil
  • 2 cloves garlic crushed

Marinate the calamari in the olive oil and combine with the chillis and garlic. On a platter combine the basil, mint, sprouts and paw paw. Heat a pan over a high heat, add the calamari and cook through. Add to the salad and squeeze over the juice of the lime.
