Prawns on the braai

Prawns of the braai taste so good, and using skewers makes the job so much easier. Serves 4

  • 18 medium-sized prawns
  • 4 tbsp fresh lemongrass end bit trimmed off
  • 5 cloves garlic
  • 1 thumbs-sized piece ginger
  • 1 fresh red chilli
  • ¼ cup fresh coriander leaves and stems
  • 2 tbsp fish sauce
  • 2 tbsp vegetable oil
  • ½ tbsp dark soy sauce
  • ½ tbsp shrimp paste
  • 3 tbsp lime juice
  • 3 tsp brown sugar
  • 2 spring onions sliced 

Place marinade ingredients together in a food processor and blitz till it forms a fine paste.  Place the prawns in a bowl and pour over the marinade.  Slather the marinade over the prawns with your hands, ensuring all surfaces are covered.  Marinate the prawns for 10-12 minutes.  Skewer the prawns onto the skewer sticks.  Grill the prawn skewers for 8 to 15 minutes or till the prawns are pink and plump and have firmed up.  Enjoy with a generous squeeze of lime juice.
